Stuffed Peppers with Tomatoes, Lentils and Feta Recipe

A healthy and colourful side dish that combines the smoky flavour of roast peppers with creamy feta, juicy tomatoes and lentils for some delicious protein and fibre.

Recipe Ingredients

  • 3 SPAR Freshline robot peppers (red, yellow and green), halved and seeds removed
  • SPAR olive oil, to rub
  • Salt and pepper, to taste
  • 3 SPAR Freshline tomatoes, cubed
  • 1 x 400g tin SPAR lentils, drained and rinsed
  • 2 SPAR Feta wheels, cubed
  • Handful finely chopped SPAR Freshline basil,coriander and parsley
  • Juice of ½ a SPAR Freshline lemon

Recipe Method

  1. Preheat the oven to 180°C.
  2. Place the pepper halves in a roasting dish and drizzle generously with olive oil and season to taste.
  3. Add the tomatoes, lentils, feta cubes, herbs, lemon juice and a drizzle of olive oil to a bowl. Season well to taste with salt and pepper.
  4. Fill the peppers with the lentil mixture and then bake in the preheated oven, about 30 minutes until the peppers are tender.
  5. Serve scattered with herbs.
