Summer Fruit Medley Recipe

Make full use of the array of fresh fruits available in summer, for a delicately spiced fresh fruit-salad.

Recipe Ingredients

  • 60ml SPAR honey
  •  60ml SPAR castor sugar
  •  60ml hot water
  • 1  Star anise
  • 1  Cinnamon quill
  • 3  Cardamom, pod split and seeds squeezed out for use
  • ½   Vanilla pod, split lengthwise
  •  1ml  rosewater (optional)
  • handful size bunch of SPAR Freshline seedless grapes (+- 30 grapes)
  •  3 nectarines
  •  3 plums
  •  3  hard-cling peaches

Recipe Method

  1. In a saucepan, combine the honey, sugar and hot water, stirring over low heat to dissolve and bring to the boil. Add in the whole spices and simmer steadily for 5 minutes without stirring.  Add the rosewater and set aside.
  2. Rinse the fruits under tap water and pat dry. Slice the grapes in half, and cut the nectarines, plums and peaches off their pips. Place the chopped fruits in a glass dessert bowl and pour over the warm syrup including the whole spices.
  3. Cover and chill thoroughly for several hours.

Hints & Tips

Honey may be substituted with SPAR golden syrup
If you are unable to buy seedless grapes, simply flick the pips out of seeded grapes with the knife tip while halving them..
