Spaghetti And Meatballs

This is a dish that the whole family will enjoy eating. Tender, full flavoured meatballs on a bed of spaghetti with a rich tomato sauce.

Ingredients

  • 500g extra lean SPAR Mince
  • ½ cup (125 ml) breadcrumbs
  • 1 egg
  • ¼ cup (65 ml) finely grated Parmesan cheese
  • 1 tablespoon (15 ml) SPAR Olive Oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 cup (250 ml) drained sundried tomatoes
  • ¼ cup (65 ml) SPAR Tomato Paste
  • 1 cup (250 ml) SPAR Chicken Stock
  • 10 SPAR Pimento Stuffed Olives, halved
  • 1 packet SPAR Spaghetti

 

Method

  1.  In a bowl, combine mince, breadcrumbs, egg and Parmesan cheese. Roll into small balls using about 2 tablespoons of mince mixture.
  2. Fry meatballs in the olive oil until browned.
  3.  In a food processor combine onion, garlic, sundried tomatoes and tomato paste.
  4. Process until smooth.
  5. Place smooth tomato mixture and stock into a saucepan. Bring to the boil, then add the meatballs and olives and allow to simmer for about 10 minutes.
  6. Boil the spaghetti in plenty of salted water. Drain when tender and serve hot with the meatballs.

 

Hints & Tips

Use half a cup of SPAR Oats instead of breadcrumbs for this recipe if you wish.
