Lemon Bars

For those bakers who love lemon curd or lemon cake, this will prove a winner as it combines both ingredient qualities with an easy method!

YIELD: 20 bars

Ingredients

Crust

  • 375 ml SPAR cake flour
  • 180 g SPAR butter or margarine
  • 90 ml SPAR icing sugar
  • 3 ml baking powder

Topping

  • 3 large SPAR eggs
  • 375 ml SPAR white sugar
  • 60 ml fresh lemon juice ( 1-2 SPAR Freshline lemons)
  • 45 ml SPAR cake flour


Method

  1. Preheat oven to 180 º C. Lightly grease an oven pan +- 15 cm x 22 cm.
  2. Mix the crust ingredients together to a soft ball of dough. Press into the oven pan base.
  3. Bake for 15 minutes.
  4. Beat the topping ingredients together to combine thoroughly and pour onto the partially baked crust. Return immediately to the oven and bake for a further 20-25 minutes until golden brown and firmly set.
  5. Set aside to cool before slicing and dredging with sieved icing sugar.

Hints & Tips

Do not use bottled lemon juice as a substitute for fresh; the resulting flavour will not be as sharp and delicious.

A food processor makes quick efficient work of mixing the base and filling ingredients.
