Sausage Gumbo

A delicious casual meal for any day of the week, with appeal for most ages. Also a perfect camping meal that can be cooked in one pot.

Ingredients

  • 1 pack SPAR pork sausages
  • 1 medium onion, finely chopped
  • 250 ml SPAR rice
  • 1 chicken stock cube dissolved in 625 ml hot water
  • 1 can SPAR baked beans in tomato sauce
  • 1 bunch fresh parsley or dhania, chopped
  • 250 g jar cheddar cheese sandwich spread
  • optional extra: a pouch of SPAR green manzanilla olives, drained


Method

  1. In a frying pan, cook the sausages, turning often. Transfer to a dish and set aside.
  2. Gently fry the onion until tender, then toss in the rice to coat with the fat. Pour over the hot stock, cover and simmer for 25 minutes until all the stock is absorbed into the rice.
  3. Stir in the cheese spread, canned baked beans, chopped parsley/dhania and lastly the cooked sausages (left whole or cut into sections). Check for seasoning.
  4. Warm through and serve immediately.

Hints & Tips

This must be eaten immediately on completion of the cooking, as it does become less visually unappealing as it cools.
Cocktail sausages can be used whole as an alternative to traditional sausages.

Recommended accompaniment: crusty bread rolls
