Rectangular Party Cake Recipe

This is the perfect recipe for a kids party. This large cake is ideal for decorating to fit any party theme.

Recipe Ingredients

  • 8 large  SPAR eggs
  • 630  g  SPAR castor sugar  (750 ml)
  • 500 ml  boiling water
  • 150 ml  SPAR sunflower oil
  • 70 g  cocoa, sifted (150 ml)
  • 5 ml  vanilla essence
  • 420g  SPAR self-raising flour, sifted  (875 ml)
  • pinch  salt

For the Icing

  • 250 g SPAR full fat margarine, softened *see note below re white margarine option
  • 500 g SPAR icing sugar, sifted
  • Any liquid (e.g. milk, juice, cream or water)
  • 5 ml vanilla essence

Recipe Method

  1. Pre-heat oven to 180 º C.  Grease an oven roasting pan measuring +- 35 - 40 cm x 27cm.
  2. Whisk eggs and castor sugar together until light and fluffy.
  3. Blend in all the remaining ingredients, mixing well.
  4. Pour mixture into the prepared pan, and bake for 35 minutes.
  5. Turn out onto a cooling rack and cut/ ice once completely cool.

Icing

  1. Beat the margarine until well softened, using an electric mixer.
  2. Gradually add half the sifted icing sugar, beating well after each addition.    
  3. Add the remaining icing sugar with a little liquid and the essence, to bring to the correct, smooth consistency.
  4. Colour may now be added.

Hints & Tips

  • To change this to a plain vanilla cake:
Leave out the cocoa, and add in 60 g (125 ml) SPAR cake flour instead.
Reduce the castor sugar to 525 g (625 ml) and add in 5 ml lemon essence.
  • A chilled or day-old cake makes spreading of the icing easier, A freshly baked cake may be problematic as the crumbs lift away into the icing more readily, as you spread.
