Roasted Mediterranean Vegetable Soup Recipe

Benefit from the convenience of the vegetables all pre-chopped for you, and enjoy the sweet roasted flavours of the Med, in a delicious soup.

Recipe Ingredients

  • 1 tray SPAR Freshline Mediterranean Vegetable Mix (600 g)
  • 3 whole garlic cloves, left in their skins
  • 1/3  can SPAR  Tomato & Onion mix
  • 1  SPAR chicken cube dissolved in 500 ml hot water
  •  1 can SPAR Cannellini beans, drained
  • salt and pepper to taste


Recipe Method

  1. Oven-roast the vegetables until completely tender, in a pre-heated oven, according to the on-pack instructions.  Include the garlic cloves in amongst the vegetables.
  2. Squeeze the soft, roasted garlic from their skins, directly into the vegetable mix. Discard the skins.
  3. Set aside ¼ of the cooked vegetables and cannellini beans. Puree the remaining roasted vegetables, cannellini beans, canned tomato & onion mix and stock together.
  4. Reheat the soup to boiling point and remove from the heat. Taste and adjust for seasoning.  Top servings with crumbled SPAR feta cheese.

Hints & Tips

Use a 1 kg bag of frozen SPAR Mediterranean Vegetable Mix in place of the fresh vegetables, and roast in the oven using the on-pack instructions.
You may like to rather use lamb stock, and add slivers of roast lamb to emphasis the Greek theme.
