Peanut and Chicken Noodles Recipe

A rich peanut butter sauce is the basis for this flavourful chicken noodle dish.

Recipe Ingredients

  • 200g-300g pad thai rice noodles

For the chicken

  • 2 SPAR Select chicken breast fillets, cut into thin slivers
  • 1 tsp bicarbonate of soda
  • 2 Tbsp SPAR Sunflower oil

For the sauce

  • 3 SPAR Freshline garlic cloves, chopped finely
  • 5cm piece of SPAR Freshline ginger, finely grated
  • 2⁄3 cup SPAR peanut butter, melted in the microwave
  • 4 Tbsp soy sauce
  • 1 cup hot water
  • 1 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp sriracha or chilli sauce
  • 1 Tbsp SPAR honey

To serve

  • Chopped SPAR Freshline red chilli to taste
  • 2 Tbsp SPAR Fruit Fuel peanuts, roughly chopped
  • 2 stalks SPAR Freshline spring onion, chopped
  • SPAR Freshline coriander

Recipe Method

  1. Bring a large pot of water to a boil and cook noodles according to the package instructions. Set aside.
  2. To tenderise, mix the chicken and bicarbonate of soda well, and leave to sit for 20 minutes.
  3. Rinse well and leave to drain in a colander. Pat dry with a paper towel to get rid of as much moisture as possible.
  4. In a medium-sized pan, add the oil and sauté the chicken, garlic and ginger for 5 minutes or until the chicken is just cooked.
  5. Mix the rest of the sauce ingredients in a little bowl and add to the pan. Mix everything together. Add the cooked noodles. Serve with chilli, chopped peanuts, spring onion and coriander.
