Mini Corn Flapjacks Recipe

Enjoy these fluffy pancakes, studded with sweetcorn as a snack, breakfast or quick anytime meal.

Recipe Ingredients

  • 8 ml softened SPAR margarine 
  • 10 ml SPAR honey
  • 1 large SPAR egg
  • 190ml mixed amount equal parts water and milk           
  • 1 ml bicarbonate of soda
  • 375 ml high bran wheat flour
  • 15 ml baking powder
  • Good pinch salt
  • 1 can SPAR Whole Kernel Sweetcorn, well drained (410g)

Recipe Method

  1. Mix together the butter, honey and egg.  Add water/milk mix and bicarb.
  2. Stir in the remaining ingredients well.
  3. Drop teaspoonful’s of mixture onto a hot non-stick frying pan coated with baking spray.
  4. Using a small lifter, turn each fritter over once browned, and cook on the other side until risen and evenly cooked.
  5. Enjoy warm and freshly cooked as is spread with margarine or  with your favourite spread of choice, such as:
  • any SPAR low fat cream cheese flavours
  • grated SPAR cheddar cheese and SPAR mild fruit chutney,
  • ham and SPAR Sweet Chilli sauce.

Hints & Tips

  • Cook larger flapjacks and enjoy for breakfast topped with a poached egg.
  • Freeze any leftover flapjacks so you have them fresh at a moment’s notice with a simple spin in the microwave.
