Indian Spiced Baked Potatoes Recipe

Crispy baked potatoes loaded with a spiced yoghurt sauce and garnished with fresh herbs.

Recipe Ingredients

  • 4 large SPAR Freshline Potatoes, washed
 

To make the filling

  • 1 SPAR Freshline red onion, sliced
  • 1 tablespoon SPAR olive oil 
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric 
  • 1 teaspoon mustard seeds 
  • 1 teaspoon smoked paprika
  • 1 SPAR Freshline garlic clove, minced
  • 1 SPAR Freshline tomato, chopped 
  • 2 tablespoon SPAR plain yoghurt (full cream or low fat)
  • 200g SPAR frozen peas 
  • 2 tablespoon SPAR Freshline coriander, chopped
  • 1/2 teaspoon sea salt 
  • 1/4 teaspoon black pepper
  • Pinch chilli flakes – optional
 

Topping

  • 8 teaspoon SPAR plain yoghurt
  • SPAR Freshline coriander
  • SPAR Freshline mint
 
 
 

Recipe Method

  1. Pre heat your oven to 180C
  2. Drizzle olive oil over the potatoes and rub into the skins. Bake for 30-40 minutes or until cooked and set aside to cool.
  3. Slice in half then scoop out the potato flesh into a bowl (leave a layer of flesh).
  4. To make the filling add the oil to a large pan and heat on a medium heat.
  5. Add in the spices and stir until they pop.
  6.  Then add the onion and fry until soft.
  7.  Add in the garlic and cook for 2 minutes, then add in the tomato.
  8.  Turn up the heat and cook for a further 1-2 minutes.
  9.  Add the yogurt, peas, and potato flesh.
  10.  Stir to combine and allow the peas to warm through.
  11.  Season well and stir in the coriander and chilli flakes (optional).
  12.  Load the filling into the potato skins, garnish with the yogurt, coriander, and mint.
