Grilled Caesar Salad Recipe

Charred lettuce hearts with a classic Caesar salad dressing.

Recipe Ingredients

  • ½ SPAR Bakery Garlic Bread loaf
  • 2 heads of SPAR Freshline lettuce, sliced into quarters lengthwise
  • 2 SPAR Freshline lemons, cut in half
 

For the dressing

  • 2 anchovies, finely chopped
  • 2 SPAR Freshline garlic cloves, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons SPAR Marksbury Select Parmiggiano Reggiano (or parmesan) cheese, grated
  • ¼ cup lemon juice, from above grilled lemons
  • 2 SPAR egg yolks
  • 1 teaspoon SPAR Dijon mustard
  • ½ cup SPAR Extra Virgin Olive oil
 

Optional toppings

  • Parmesan shavings
  • Crispy bacon
  • SPAR Freshline Roma tomatoes, halved

Recipe Method

  1. Preheat the oven to 180C.
  2. Bake the bread until melted, pull apart into chunks. Set aside.
  3. Pre-heat a grill pan on high.
  4. Place the lettuce hearts and lemons on the grill on the direct heat for +- 2 minutes per side to get a nice char.
  5. Place lettuce onto a platter, top with broken up pieces of garlic bread, bacon, tomatoes, and finish with Parmesan shavings.
  6. For the dressing.  Place the anchovies, garlic, salt, pepper, and parmesan cheese in a food processor and blend until they turn into a paste.
  7. Add the lemon juice, egg yolks, mustard, and olive oil.
  8. Blend on low until it emulsifies. This will take +- 1 minute, on low.
  9. Pour over the prepared salad and serve.
