Butternut, Carrot and Onion Bruschetta Recipe

Roasted fresh veg and goat cheese, flavoured with fresh herbs and honey on a crisp garlic baguette.

Recipe Ingredients

  • 1 large SPAR Freshline butternut, cubed
  • 4 large SPAR Freshline carrots, diced
  • 2 medium SPAR Freshline onions, sliced
  • 2 tablespoons SPAR balsamic vinegar
  • 1 tablespoon SPAR honey
  • 1 tablespoon SPAR olive oil
  • 1 cloves SPAR Freshline  garlic, minced
  • ½ teaspoon SPAR Freshline rosemary, chopped
  • ½ teaspoon SPAR Freshline thyme, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup SPAR pecan nuts, roasted and roughly chopped
  • 1 cup SPAR Freshline rocket
  • 100g Goats cheese
  • SPAR Freshline Garlic bread

Recipe Method

  1. Preheat oven to 180°c.
  2. Line a baking pan with baking paper.
  3. Place butternut, carrots, onions into the baking pan and add vinegar, honey, oil, garlic, rosemary, thyme, salt & pepper
  4. Toss well to ensure the veggies are well coated.
  5. Bake in the oven for 20-30 minutes, mixing every 10 minutes, until butternut is tender. 
  6. Remove from oven and add pecan nuts. Mix gently.
  7. Cool slightly before assembling.
  8. Take a piece of sliced garlic bread and spread on goat cheese. Top with rocket and then butternut mixture.
