Green pepper and chicken kebabs on herbed yoghurt Recipe

A lovely, light summer dish with fresh green flavours.

Recipe Ingredients

Kebabs

  • 8 SPAR Select chicken breast fillets, cut into cubes
  • 3 SPAR Freshline green peppers, seeds removed and cut into cubes
  • SPAR olive oil, to drizzle
  • 5ml dried oregano
  • 5ml dried mint
  • Salt and freshly ground black pepper, to taste
 

Herbed Yoghurt

  • 250ml SPAR plain yoghurt
  • Handful SPAR Freshline chives, parsley and coriander, finely chopped
  • 30ml SPAR olive oil
  • 5ml chilli flakes
  • Juice of ½ lemon
  • 1 garlic clove, peeled and minced
 

To Serve

  • SPAR Freshline cucumber, sliced, to serve
  • SPAR Freshline Salad leaves or herbs, to serve
  • Lemon wedges, to serve

Recipe Method

  1. Thread the chicken cubes and green pepper onto skewers. Generously drizzle the skewers with olive oil and rub with the dried herbs and season generously to taste with salt and pepper.
  2. Braai the chicken skewers over medium coals until the chicken is cooked through.
  3. Make the herbed yoghurt by combining all ingredients in a bowl. Season well to taste.
  4. To serve, spread the herbed yoghurt over a serving platter, top with the kebabs, sprinkle with herbs or salad leaves, sliced cucumber and lemon wedges for squeezing.
