Golden Onion Rings

These puffy, golden rings are awesome with grilled steak, but equally a treat enjoyed by themselves with a cold beer.

Ingredients

  • 5 ml salt
  • 3 ml bicarbonate of soda
  • 1 carton buttermilk
  • 4 X-large onions, peeled, sliced into thick rings
  • SPAR sunflower oil for shallow frying

Method

  1. Measure the flour and salt in a SPAR Good Living porcelain mixing bowl. Add the egg yolks.
  2. Stir the bicarbonate of soda into the buttermilk until it dissolves and the mixture foams. Pour this onto the flour mixture and whisk all the ingredients together to a smooth batter.
  3. Drop the onion rings into the batter. Using a fork, lift one ring at a time until coated with batter, and transfer immediately into hot shallow oil. Fry several at once, for a minute or so on each side until puffy and browned.
  4. Drain on crumpled kitchen paper towel, then grind over SPAR garlic parsley salt. Serve immediately.

Hints & Tips

Shallow frying implies oil twice the depth of the onion rings.
Substitute buttermilk for plain yoghurt or maas.
Wondering what to do with the 3 egg whites? Make up a batch of meringues or a pavlova, by gradually whisking in 250 ml castor sugar, once the egg whites have been beaten to soft peak stage.
