Curried Mince and Potato Jaffle Recipe

A delicately spiced mince and potato curry with apple for a touch of sweetness to enhance the spices.

Recipe Ingredients

  • 30 ml SPAR olive oil
  • 1 SPAR Freshline onion, finely chopped
  • 2 cloves SPAR Freshline garlic, finely chopped
  • 30 ml ground cumin
  • 45 ml roasted masala (or curry powder)
  • 500 g SPAR beef mince
  • 2 SPAR Freshline Golden Delicious apples, roughly grated, skin on
  • 2 SPAR Freshline potatoes, peeled and cubed
  • 410 g can SPAR tomato purée
  • 410 g can coconut milk
  • salt and freshly ground black pepper
  • 20 slices SPAR Bakery white bread
  • 120 ml soft SPAR butter

Recipe Method

  1. Heat olive oil in a large pot. When hot, add onion, garlic, and spices. Stir-fry for 3-5 minutes or until spices smell aromatic.
  2. Add mince, apple and potato and fry for 3-5 minutes or until mince forms granules. Add tomato purée and coconut milk. Stir through and reduce heat. Simmer for 15-20 minutes or until liquid has reduced by half and potatoes are soft and cooked. Season with salt and pepper. Mix through.
  3. Spread one side of each slice of bread with butter. Place one slice, buttered side facing down, in a jaffle iron.
  4. Spoon mince mixture on top. Place second slice of bread on top, buttered side facing up. Close jaffle iron and trim away excess bread.
  5. Cook over low heat for about 2-3 minutes each side or until golden brown.
  6. Remove from jaffle iron and make more jaffles with remaining bread and filling. Serve hot or pack cold for lunch at work or school.
