Peppered Ostrich with Citrus Salad Recipe
Ostrich is a low-fat alternative to steak. Pair it with some fresh naartjie, orange and grapefruit for a delicious and healthy salad.
Recipe Ingredients
- 6 SPAR Select Ostrich Steaks
- Salt, to taste
- 3 tablespoon SPAR mustard
- 4 tablespoon, freshly ground pepper
- 1 tablespoon SPAR olive oil
- 2 SPAR Freshline large oranges
- 1 large SPAR Freshline pink grapefruit
- 2 medium SPAR Freshline naartjies
- 1/4 SPAR Freshline cucumber, thinly sliced
- 1/4 SPAR Freshline red onion, thinly sliced
Garnish
- SPAR Freshline mint leaves and SPAR Freshline pomegranate jewels
For the vinaigrette
- 3 tablespoons SPAR olive oil
- 3 tablespoons pomegranate juice
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon SPAR honey
Recipe Method
- Season ostrich steaks with salt and smear mustard over all the steak
- Roll in black pepper
- Heat a frying pan over a medium heat. Add 1 tablespoon olive oil.Add the steaks and fry over a high heat for 3 minutes on each side or cooked to your preference.
- Remove from the pan and set aside to rest before slicing.
- Peel the citrus, removing as much pith as possible, and slice into circles. Remove any pips.
- Layer fruit on a serving dish, sprinkle salt to taste.
- Top with cucumber and red onions
- To make the vinaigrette, whisk together the olive oil, pomegranate juice, vinegar, lemon juice, rind, and honey until well combined.
- Drizzle over the salad.
- Place the sliced ostrich steak on top of the citrus salad.
- Garnish with fresh mint and pomegranate jewels.
