Marinated Mushrooms Recipe

White button mushrooms and portabellini mushrooms combined with fresh herbs, garlic and a classic vinaigrette.

Recipe Ingredients

  • 1 x 400g SPAR Freshline packet white button mushrooms, whole
  • 2 x 250g packet SPAR Freshline portabellini mushrooms, halved
  • 1/4 cup SPAR Extra Virgin olive oil
  • 1/4 cup SPAR vinegar
  • 2 tablespoons SPAR Freshline parsley, chopped
  • 1 teaspoon SPAR sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon chilli pepper flakes
  • 1/4 teaspoon SPAR Freshline thyme
  • 1 clove SPAR Freshline garlic, minced
  • Pinch pepper

Recipe Method

  1. Wipe mushrooms clean with paper towel. Set aside.
  2. In a large frying pan over a medium heat, fry the mushrooms in 2 tablespoon of the oil and a pinch of salt for + -7 minutes.
  3. Set aside to cool for 5 minutes.
  4. In a small bowl combine the marinade ingredients: oil, vinegar, parsley, sugar, oregano, salt, chilli, thyme, garlic and pepper.
  5. Place the mushrooms in the marinade and set aside for 10 minutes.
