Ciabatta and Sausage Bake Recipe

A meaty, crispy dish of sausage with fresh vegetables and herbs baked with ciabatta.

Recipe Ingredients

  • 3 tablespoon SPAR butter
  • 300g beef or lamb sausage, casing removed
  • 1 SPAR Freshline carrot, finely chopped
  • 1 SPAR Freshline onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 cup SPAR Freshline baby tomatoes, halved
  • 2 cups SPAR chicken stock
  • 1/3 cup SPAR olive oil
  • 3 tablespoon SPAR Freshline parsley, roughly chopped
  • 1 tablespoon SPAR Freshline thyme, roughly chopped
  • 1 tablespoon SPAR Freshline sage, roughly chopped
  • 1 loaf SPAR Freshline ciabatta bread, cut into 1cm squares
  • Salt & pepper, to taste

Recipe Method

  1. Preheat oven to 180°C.
  2. Melt 1 tablespoon butter in a large frying pan, over a medium-high heat.
  3. Cook the sausage, breaking up meat while stirring, +- 8 minutes.
  4. Transfer the sausage to a large baking dish and set aside.
  5. Add remaining butter to the pan and cook carrots, onion and celery until soft
  6. Transfer to the sausage dish and set aside.
  7. Add the tomatoes, stock, oil, parsley, thyme, sage, bread, salt and pepper to the sausage dish and toss to combine.
  8. Place in the oven and bake until golden brown and bread is slightly crisp on top 30–35 minutes.
  9. Garnish with parsley and serve.
