One Gammon Three Meals

It’s worth your while to cook a large gammon that can be served on creamy mash for a delicious dinner. Leftovers are perfect for lunchtime bagels and to enrich chunky warming soups for a quick meal solution.

  • SPAR freshline onion, quartered1

  • Bay leaf1
  • Juice (1 cup) of 3 SPAR freshline oranges.1
  • (500ml) SPAR Ginger Beer2 cups
  • (60ml) SPAR Orange Juice0.25 cups
  • (15ml) SPAR Hot Mustard1 Tbsp
  • (15ml) SPAR honey1 Tbsp
  • SPAR freshline potatoes, peeled and cubed1 kg
  • SPAR butter, soft100 g
  • (250ml) SPAR milk1 cup
  • (120g) SPAR freshline cabbage, grated1.5 cups
  • (200g) SPAR freshline spinach, shredded1 cup
  • (45ml) SPAR Mustard Sauce3 Tbsp
  • Juice of 1 SPAR freshline orange1
  • SPAR cream1 cup
  • SPAR Bakery Bagels, Seeded4
  • SPAR butter50 g
  • Left over gammon, finely sliced1
  • SPAR freshline Coleslaw Mix350 g
  • SPAR mayonnaise0.5 cups
  • (10ml) SPAR Wholegrain Mustard2 tsp
  • (10ml) SPAR honey2 tsp
  • Juice and zest of 1 SPAR freshline orange1
  • Of leftover shredded gammon2 cups

Helpful Hint

The gammon can be cooked the day before. Leave submerged in the cooking liquid in a non-metallic container in the fridge until ready to slice to avoid the meat drying out. Fresh July Recipes

Instructions

Step 1

Place the gammon in a large pot with the vegetables, herbs, orange juice and ginger beer.

Top up with water until submerged and bring to the boil.

Reduce the heat to a simmer and cook according to the packaging’s instructions.

Remove the gammon from the liquid and place on a baking tray.

Cut off the string and peel off the top layer of skin.

Score the fat with a sharp knife.

Brush the glaze over and place under the grill basting frequently with the rest of the glaze until the fat is crispy and sticky.

To make the mash, cook the potatoes in salted, boiling water for 30 minutes.

Drain and mash with the 80g of butter, milk and season to taste.

Stir-fry the cabbage and spinach in the remaining butter and stir through the mash.

To make the creamy mustard sauce, heat the mustard, orange juice and cream together until it starts to thicken. Season to taste and serve with the sliced gammon and mash.

Slice and toast the bagels on one side.

To make the slaw, mix the mayonnaise, mustard, honey and orange together and stir through the coleslaw mix.

Spread the bagels with butter and extra mayonnaise and top with coleslaw and sliced gammon.

Add the gammon to the soup mix and cook according to the packaging instruction, using water or chicken stock.

Garnish with parsley and serve.
