Salted Macadamia and Almond Nut Brittle
Makes this delicious recipe as a road trip treat or as a tasty gift for someone special.
Salted Macadamia and Almond Nut Brittle

  • Serves: 4 - 6

Ingredients

  • 2½ cups white sugar
  • 60ml golden syrup
  • ½ cup flaked almonds
  • 300g macadamia nuts, salted

Method

  1. Heat a medium saucepan on medium heat and add 1/3 of the sugar.
  2. Allow it to caramelise. Add another 1/3 of the sugar and swirl the saucepan until all the sugar melts together. Do not stir; swirl the pan by the handles or the sugar may crystalise.
  3. Repeat with the remaining sugar. Remove any crystalised pieces with a spoon.
  4. Lower the heat and add the golden syrup and swirl together; it will bubble slightly at this point.
  5. Place the almonds on a prepared baking tray.
  6. Evenly scatter the whole macadamia nuts over the almonds.
  7. Carefully pour the melted sugar over the nuts ensuring the whole top is covered.
  8. Set aside to cool and harden for 30 minutes to one hour.
  9. Snap into shards and serve over ice cream or stirred into frozen yoghurt.
