Macaroni & Cheese Pasta Cups
Try this simple pasta lunch that’s easy to make and yummy to eat. Makes a great alternative to a cheese and tomato sandwich.
Macaroni & Cheese Pasta Cups

  • Makes: 4 – 6 depending on cup or container size

Ingredients

  • 150 g SPAR Macaroni
  • 65 ml SPAR Mayonnaise
  • 65 ml Cheese Spread
  • 2 – 3 SPAR Eggs, boiled
  • 6 rashers SPAR Bacon or 6 Vienna’s
  • 1 SPAR Freshline Tomato, chopped or 4 - 5 cherry tomatoes, halved
  • SPAR Grated Cheddar Cheese

Method

  1. In a large saucepan of boiling salted water, cook the macaroni until tender. Drain and rinse under cold water. Allow to cool.
  2. Combine the mayonnaise and cheese spread in a bowl and mix well before adding the cooked, cooled pasta and tossing to coat.
  3. Chop the bacon or slice vienna’s and fry in a nonstick pan.
  4. In a plastic cup, layer a few spoonfuls of the macaroni, a little bacon or sliced vienna, a few slices of boiled egg, tomato and grated cheese in any order.
  5. Cover with a lid and don’t forget to pack a spoon.
  • This is a great way of using up left over pasta for a single serving
