Apricot Egg and Chips
An “eggciting” breakfast idea. It’s quick, it’s fun and it’s just what you need to start the day.
Apricot Egg and Chips

Ingredients

  • SPAR Double Cream or Vanilla Yogurt
  • SPAR Freshline Apricots or Tinned Apricot Halves
  • SPAR Freshline Apples
  • A splash of SPAR Lemon Juice
  • SPAR Muesli Honey & Almond

Method

  1. Take about 60 ml of yoghurt and make the shape of a fried egg on your plate. 
  2. Cut the apricot in half.  One half will make the “yolk” of your egg.  Place the apricot half in the middle of the yogurt to form the egg yolk.
  3. Peel the apple and cut into chunky “chips”.  Sprinkle these with a little lemon juice to prevent browning.
  4. Serve your egg and chips with a small bowl of Muesli to sprinkle on top adding crunch. 
  • Use a colourful plate to serve this as the egg will stand out beautifully.  Serve with a little SPAR Honey if needed.
