Apple Pie in an Apple
  • Prep Time: 20 mins Cook Time: 30 mins

  • Makes: 8

Ingredients

Pie Dough:
  • 250ml SPAR brown bread flour
  • 125ml corn flour
  • 1ml SPAR salt
  • 2ml baking powder

Filling:
  • 15ml SPAR sugar
  • 100g SPAR butter, cold
  • 1 SPAR egg
  • 8 SPAR Freshline Granny Smith apples
  • 65ml SPAR white sugar
  • 65ml SPAR brown bread flour
  • 3ml cinnamon

Method

  1. Pre heat the oven to 180°C.
  2. First make the dough: Mix together the flour, corn flour, salt and baking powder.  Using your fingers, rub the butter in until it becomes fine crumbs.
  3. Add the egg and mix until you have a firm dough.  Add a little water if needed.  Wrap in SPAR cling wrap and place in the fridge.
  4. Cut the top off each apple. Use a small knife and a spoon to carefully carve out the apple pulp leaving a small bowl.
  5. Chop up the pulp that you have removed, discarding the core.
  6. Combine the chopped pulp, sugar, flour and cinnamon and then place back into the 8 apples.
  7. Take out the dough and roll out.  Cut 8 circles with a cookie cutter and, using a small cutter, cut a hole in the top of each to allow steam to escape.
  8. Place a circle of dough on each apple to form the pie crust.  Place the prepared apples on a greased baking tray and bake for 20 - 30 minutes until the apples are soft and the pastry is golden and crisp.
  • Serve with SPAR vanilla custard.
