Hearty Winter Stew with Dumplings
Treat the family to good old fashioned fare with this delicious stew finished off with dumplings.
Hearty Winter Stew with Dumplings

Ingredients

  • 1,5kg SPAR stewing beef or brisket slices
  • 30ml SPAR Steak & Chops spice
  • 30ml SPAR oil
  • 1 large SPAR Freshline onion, chopped
  • 1 SPAR beef stock cube
  • 250ml red wine
  • 750ml hot water
  • 4 SPAR Freshline potatoes, peeled and cut into chunks
  • 3 SPAR Freshline large baby marrows, thickly sliced
  • 250ml SPAR frozen baby carrots
  • 15ml corn flour mixed to a smooth paste with 2 tablespoons (30ml) milk or water
Dumplings:
  • 250ml SPAR cake wheat flour
  • 5ml baking powder
  • 3ml salt
  • 30ml fresh herbs, chopped 
  • 100ml SPAR butter or margarine
  • 65ml cold water

Method

  1. Roll the beef pieces in the Steak and Chops spice.  Heat the oil and brown the meat.  Once browned, remove from pan and fry the onion until soft.  
  2. Return the meat to the pan and stir in the stock cube, wine and hot water. Allow to simmer for 45 – 60 minutes or until the meat is tender, adding more liquid if necessary
  3. Add potatoes, marrows and carrots. Simmer for 15 minutes or until potatoes are cooked through.  
  4. Stir in the corn flour paste and heat, stirring until sauce thickens.
  5. For the dumplings, sift the flour, baking powder, salt and herbs together.  Rub in the butter or margarine.  Add the cold water to form a soft dough.
  6. Place spoonfuls of the dough to the top of the stew.  Cover with a lid and simmer gently for 10 minutes or until dumplings are cooked through.
Recommended Wine: Have a glass of Olive Brook Shiraz/ Cabernet Sauvignon while enjoying this hearty meal.
  • Make a delicious pie by using this recipe but instead of making dumplings, transfer the stew to a deep pie dish.  Top with a roll of SPAR puff pastry.  Trim the edges, brush with egg and bake at 200°C for 20 - 25 minutes or until the pastry is puffed and golden.
