Seafood Pasta Salad

A perfect summer salad featuring scrumptious seafood, pasta and an assortment of summer vegetables.

Ingredients

  • 1 celery stick, thickly sliced  
  • 500 ml (2 cups) boiling water
  • 1 red pepper, seeded and diced 
  • 1 bag SPAR Seafood Mix
  • 1 small red onion, thinly sliced 
  • 250 ml (1 cup) SPAR Frozen Peas
  • 2 garlic cloves, finely chopped 
  • 1 bay leaf
  • 125 ml (1/2 cup) SPAR Olive Oil 
  • Pinch of salt
  • Juice of 1 lemon   
  • 10 peppercorns
  • 80 ml (1/3 cup) fresh flat-leaf parsley, plus extra for serving
  • 1 packet SPAR Italian Penne
  • salt and freshly ground black pepper, to taste

Method

  1. Cook the pasta according to the pack instructions.
  2. In a deep pot, add all the ingredients for the seafood mix and boil for 5 minutes.
  3. Drain, discard the peppercorns and bay leaf and leave to cool completely.
  4. In a bowl combine the celery, pepper, red onion and garlic. Mix in the oil, lemon juice, parsley and season. Mix in the seafood, cooked pasta and stir to combine.
  5. Refrigerate and serve sprinkled with extra parsley.
