Christmas Gammon with Rosemary Glaze and Pickled Apples Recipe

Recipe Ingredients

Pickled Apples

  • 330 ml apple cider
  • 750 ml white wine vinegar
  • 210 g (250 ml) SPAR castor sugar
  • 2 red SPAR Freshline chillies, finely chopped
  • 30 ml fennel seeds
  • 250 ml water
  • 9 SPAR Freshline Granny Smith apples, peeled
 

Gammon

  • 1 x SPAR Tender & Tasty Uncooked Gammon (boneless)
  • 2 SPAR Freshline onions, cut in half
  • 4 bay leaves
  • 10 SPAR black peppercorns
  • Handful of whole cloves
 

Glaze

  • 200 g (250 ml) SPAR honey
  • 60 ml SPAR wholegrain mustard
  • 500 ml SPAR orange juice
  • 6 sprigs SPAR Freshline rosemary

Recipe Method

Pickled Apples

Add apple cider, vinegar, sugar, chili, fennel and water into a medium-sized saucepan. Bring to a boil over low heat and stir until sugar has dissolved. Turn up the heat and boil for 5 minutes. Pour hot pickle over apples and cover the bowl with plastic wrap. Refrigerate for 2 hours.
 

Gammon

Place gammon in a large saucepan. Add onions, bay leaves and peppercorns. Cover with water and bring to a boil over high heat. Cook for 30 minutes per 500 g, (minus 30 minutes oven-roasting time). Carefully remove from water and peel off skin while still warm, exposing the layer of fat. Place in roasting pan. Use a sharp knife to cut a diamond pattern in the fat layer. Press a clove into the centre of each diamond.
 

Glaze

Heat oven to 180 °C. Place all glaze ingredients in a medium-sized saucepan and bring to a boil. Simmer for 3 minutes. Pour mixture over gammon. Place uncovered gammon in the oven and roast for 30 minutes. Baste at 10 minute intervals with the glaze in the pan. Bake until gammon is golden brown. Place on a serving platter and pour over remaining sauce. Serve with pickled apples.
