Recipe Ingredients

  • 3 Tbsp sunflower oil
  • 1 onion, sliced
  • 1 Tbsp curry powder
  • 1 green pepper, seeded and sliced
  • 2 carrots, peeled and cut into strips
  • 1 can SPAR tomato and onion mix
  • 1 Tbsp sugar
  • 1 fresh green chili, chopped
  • salt and freshly milled pepper

Recipe Method

  1. Fry the onion in the oil until soft and golden - about 8 minutes.
  2. Add the curry powder and cook for a minute.
  3. Add the green pepper and carrots and cook for another 2 minutes.
  4. Add the tomato, sugar and chilli and simmer for 10 minutes.
  5. Season well with salt and pepper.
