Calamari Paella Recipe

An easy version of a classic Spanish dish featuring calamari and bacon in a spicy rice medley.

Recipe Ingredients

  • 2 tablespoons (30 ml) SPAR Olive Oil
  • 2/3 cup (165 ml) Olive Brook Dry White Wine
  • 1 red onion, finely diced
  • 1 cup (250 ml) SPAR Rice
  • 200g SPAR Streaky Bacon, chopped
  • 1 SPAR Chicken Stock Cube
  • 1 red pepper, diced
  • 2 cups (500 ml) water
  • 3 garlic cloves, crushed
  • 3 ml ground Turmeric
  • Pinch of cayenne pepper
  • 500 g SPAR Calamari
  • 1/4 teaspoon (1 ml) paprika
  • 2/3 cup (165 ml) SPAR Frozen Peas
  • 2 tomatoes, diced
  • 1 small handful of parsley, chopped roughly
  • Black Pepper
  • Lemon wedges, to serve

Recipe Method

  1. Heat the olive oil and fry the onion, bacon, red pepper and garlic for 5 minutes. Add the cayenne pepper, paprika and tomato and stir for 1 minute. Season well with cracked black pepper.
  2. Add the white wine and bring to the boil.
  3. Add the rice, stock cube, water and turmeric, stir briefly then turn the heat down to a very gentle simmer and leave to cook uncovered for 15 minutes.
  4. Place the calamari rings onto the bed of rice and press them down slightly so they are submerged. Sprinkle over the peas, cover the pan and leave to cook for a further 10 minutes.
  5. If the rice looks like it's drying out, add a little more stock. If it looks too wet, let the paella simmer for a while with the lid off.
  6. When the rice and calamari are cooked and tender, sprinkle over the parsley and serve with fresh lemon wedges.
