Using Leftovers in the Kitchen
Get the most out of your grocery budget by using leftovers wisely.
  • Freeze left over wine in ice-trays. You can use the cubes when making sauces, casseroles or stews.
  • Use left over fruit mince by adding an equivalent amount of mashed pie apples, to make delicious pie fillings or add a tasty layer to a trifle.
  • Going on holiday and have a few heads of garlic that won’t keep while you are away? Peel cloves of garlic and place them in a jar. Cover completely with olive oil, seal and store in the fridge. Both the garlic and olive oil can be used and will keep for many months.
  • A bit of jam left in a can or jar, mixed with half the amount of vinegar and a dash of Worcestershire sauce, turns it into a quick chutney. Use it as sandwich spread or as a rub when baking chicken pieces.
  • Scrape the little bit of mayonnaise left on the sides of the jar. Stir it into hot mashed potato or into scrambled egg before serving. It adds a delicious tang.
  • Save peelings and tops from carrots, onions and other veg and keep in a sealed bag in the fridge. Use this with leftover bones as the basis for delicious home-made stock.
