Sweet Corn Soup

Sweet Corn Soup
A creamy corn soup to brighten up any cold winter day.
Sweet Corn Soup

  • Serves: 4 – 6 

Ingredients

  • 1 SPAR Freshline Onion, finely chopped
  • 30 g SPAR Butter
  • 30 ml SPAR Cake Wheat Flour
  • 500 ml SPAR Low Fat Milk
  • 250 ml water
  • 1 x 410g can SPAR Sweetcorn
  • 1 SPAR Chicken Stock Cube
  • SPAR Grated Cheddar Cheese
  • SPAR Freshline Parsley chopped

Method

  1. In a large saucepan, fry the onion in butter until soft.
  2. Add the flour and fry for 1 minute, stirring continuously.
  3. Remove from the heat and add the milk, water and sweetcorn, stirring until smooth.
  4. Return to the heat and add the stock cube.  Stir until thickened.
  5. Serve in bowls or mugs with a scatter of cheddar cheese and parsley on top.
  • Add some cooked chicken to this soup to turn it into a chicken and corn soup.  It’s a great way to use left over chicken.
