Roast Beef Kebabs with Hummus and Flat Bread
Recreate left over roast beef into these and leave guests amazed at your creativity.
Roast Beef Kebabs with Hummus and Flat Bread

  • Serves: 2 - 4

Ingredients

  • 1 Red Onion
  • 500g zucchini
  • 4 yellow / orange peppers
  • Olive Oil for drizzling
  • Season with salt and freshly ground pepper
  • 6 - 8 slices of leftover roast beef in gravy
  • 8 bamboo skewers

For the Hummus
  • 1 x 400g can chickpeas
  • 2 garlic clove
  • 1 Tbsp smooth peanut butter
  • 60ml olive oil
  • season with salt and freshly ground pepper

Method

  1. Cut the vegetables into chunks, place into a bowl and toss with olive oil and seasoning.
  2. Heat a griddle pan on medium heat and cook the vegetables until charred and cooked.
  3. Heat the slices of roast beef in the gravy and cut into smaller pieces.
  4. Skewer the vegetables and meat onto each skewer.

To make the hummus:
  1. Combine the chickpeas, garlic and peanut butter in a blender.
  2. Begin to blend before drizzling the oil in evenly. Season with salt and pepper before placing into a bowl. Add sesame seeds and an extra drizzle of olive oil before serving.
