Mango Fool
Your Must Have Fruit this Summer!
Mango Fool
  • Prep Time: 10 mins Plus Chilling Time

  • Serves: 44

Ingredients

  • 2 Large ripe mangoes, peeled and chopped
  • Juice and zest of 1 lemon
  • 2 tbsp castor sugar - optional
  • 500ml thick Greek-style Yoghurt

Method

  1. Reserve a few pieces of mango to garnish.
  2. Purée the remaining mango flesh with the lemon juice.
  3. Add the castor sugar to taste, depending on the sweetness of the mangoes.
  4. Fold the purée into the yoghurt and spoon into glasses. Place in the refrigerator until well chilled.
  5. Serve chilled and garnished with the reserved mango pieces.
