Mexican Nacho Eggs in-a-cup

Prep Time: 3-5 min​ Cook time: 70-90 sec
Serves: 1

Ingredients

  • 1 egg
  • 1 tbsp milk
  • ½ spring onion, chopped
  • Salt and pepper, to taste
  • 1 tbsp mature cheddar cheese, plus extra to serve
  • 4 tortilla chips
  • 1 tbsp salsa
  • Sour cream, to serve
  • Guacamole, to serve (optional)

Method

  1. Beat egg and milk with a fork in a coffee cup.
  2. Stir in spring onion, salt and pepper and cheddar.
  3. Add the tortilla chips, broken into small pieces if they cannot fit in the cup. Top with salsa.
  4. Microwave on high until done, about 70 seconds to a minute and a half.
  5. Garnish with sour cream, grated cheddar and serve with guacamole.

Ham and Cheese Coffee Cup Quiche

Prep Time: 3-5 min Cook Time: 70-90 sec
Serves: 1

Ingredients

  • 1 egg
  • 1 tbsp cream cheese
  • 1 tbsp grated cheddar
  • Salt and pepper, to taste
  • ¼ of a bagel (or similar amount of white bread), torn into pieces
  • 1 slice ham, cut into pieces
  • Fresh chopped chives, to garnish

Method

  1. In a bowl, beat the egg, cream cheese, cheese and salt and pepper
  2. Stir in the bagel pieces and ham. Pour into a coffee mug.
  3. Microwave on high for about 1 minute 10 seconds to a minute and a half.
  4. Garnish with fresh chopped chives.

Pancake in a mug with berries & syrup

Prep Time: 2 min Cook Time: 90 sec - 2 mins

Ingredients

  • 4 tbsp flour
  • ¼ tsp baking powder
  • 1 egg
  • 3 tbsp maple syrup, plus extra to serve
  • 1tbsp oil
  • 2 tbsp milk
  • Fresh berries, to serve

Method

  1. In a mug, combine the flour and baking powder.
  2. Whisk together the egg, syrup, oil and milk. Add to the mug and stir until a smooth mixture is formed.
  3. Microwave on high for 90 seconds to 2 minutes – depending on the strength of your microwave.
  4. Serve with fresh berries and maple syrup.
 

French Toast in a Mug

Prep Time: 3 mins Cook Time: 2 mins
Serves: 1

Ingredients

  • 1 large egg
  • ¼ cup milk
  • 1 ½ tbsp maple syrup
  • 1 tsp ground cinnamon
  • Pinch of salt
  • ½ tbsp unsalted butter, at room temperature
  • 1 slice white bread

Method

  1. Whisk together the egg, milk, maple syrup, cinnamon and a pinch of salt in a large mug until combined.
  2. Evenly spread the butter on one side of the bread.
  3. Cut the bread into bitesize pieces and add them to the mug, pressing down lightly so all the bread is submerged.
  4. Microwave the bread mixture on high for 2 minutes, pausing every 30 seconds.
  5. Let the French toast cool in the mug for about 1 minute before serving.

Blueberry Muffin in a Mug

Prep Time: 5 mins Cook Time: 2 mins
Serves: 1

Ingredients

  • ¼ cup flour
  • 1 tbsp sugar
  • ¼ tsp baking powder
  • 3 tbsp milk
  • 1 tbsp melted coconut oil (or vegetable oil)
  • ¼ tsp vanilla extract
  • ¼ cup fresh or frozen blueberries

Toppings :

  • 1 tbsp coconut oil
  • 1 tbsp flour
  • 1 tbsp sugar

Method

  1. In a microwave-safe mug combine the flour, baking powder, and sugar.
  2. Stir in the milk, coconut oil/vegetable oil and vanilla.
  3. Place the berries on top.
  4. To make the crumble topping:
  5. Crumble together the coconut oil, flour and sugar and sprinkle it on top of the blueberry muffin mix.
  6. Microwave on high for 2 minutes.
