Smoked Salmon, Watercress and Potato Salad Platter
A celebration salad, perfect for a family lunch or picnic! Let’s take advantage of our beautiful South African weather, pack a picnic basket and head off to a nature reserve or park and have some down time.
Smoked Salmon, Watercress and Potato Salad Platter
  • Prep Time: 10 minutes Cooking Time: 20 minutes

  • Serves: 6

Ingredients

  • 500g SPAR baby potatoes, washed
  • 1 bunch watercress sprigs or lettuce leaves, washed
  • 2 SPAR Freshline Avocados, halved, stones removed, peeled, sliced
  • 4 - 5 SPAR Freshline Israeli cucumbers, thinly sliced
  • 100g SPAR Smoked Norwegian Salmon
  • 2 tablespoons micro herbs or sprigs, chopped
  • 2 tablespoons capers
Dressing
  • 1/2 cup SPAR Mayonnaise
  • ½ cup SPAR French Salad Dressing
  • 1 tablespoon capers, finely chopped

Method

  1. Place potatoes in a saucepan and cover with cold water. Bring to the boil and simmer uncovered 15 -20 minutes or until tender. Drain and set aside to cool slightly then cut potatoes into slices and cool to room temperature.
  2. Meanwhile, place watercress or salad leaves in a large bowl of iced water to refresh, Stand 5 minutes then drain and shake dry in a clean tea-towel.
  3. Combine all the dressing ingredients together.
  4. Scatter the watercress over base of a large platter.  Mix the potatoes with half the dressing.  Arrange potatoes, avocado, cucumber and smoked salmon on top of the leaves. Drizzle over the remaining dressing, season with salt and freshly ground black pepper. Garnish with micro herbs and capers.
  • This dressing is delicious made with SPAR Natural Yogurt instead of mayonnaise for a healthier salad.
