Bacon and Portobello mushroom melt pots

Bacon and Portobello mushroom melt pots

  • Serves: 4-6

Ingredients

  • 200g SPAR Streaky Back Bacon, chopped
  • 6 SPAR Freshline Portobello or Button Mushrooms, sliced
  • 4 SPAR Freshline Spring Onions, chopped
  • 30ml SPAR Oil
  • 6 SPAR eggs beaten
  • 125ml SPAR Milk
  • 125ml SPAR Mayonnaise
  • 375ml SPAR Mozzarella grated

Method

  1. Preheat oven to 180  ̊c.
  2. Fry the bacon, mushrooms and spring onions in oil until bacon is crispy. Beat the eggs, milk and mayonnaise together. 
  3. Stir in the fried bacon mixture and cheese.
  4. Pour mixture into 4-6 greased ramekin dishes. 
  5. Bake for about 25 minutes or until set.
