Banana Caramel Pancakes
‘Mix a pancake, Stir a pancake, Pour it in a pan, Fry a pancake, Toss a pancake, Catch it if you can…’
Banana Caramel Pancakes
  • Prep Time: 15 minutes  Cook Time: 25 minutes

  • Makes: approx 12 pancakes

Ingredients

  • 500 ml SPAR Brown Bread Wheat Flour
  • 10 ml baking powder
  • Pinch of salt
  • 5 ml cinnamon
  • 3 ml nutmeg
  • 500 ml SPAR low fat milk
  • 2 SPAR eggs
  • 5 ml vanilla essence
  • 2 large SPAR Freshline bananas, mashed
  • 30 ml SPAR butter, melted

Easy Caramel Sauce

  • 125 ml SPAR golden syrup
  • 185 ml SPAR icing sugar
  • 5 ml vanilla essence

Method

  1. In a large bowl combine flour, baking powder, salt, cinnamon, and nutmeg.
  2. Measure out the milk adding the eggs and vanilla to it. Mix well.
  3. Add milk mixture to the dry ingredients, stirring till combined. Then add mashed bananas and melted butter.
  4. Heat and grease a frying pan or crepe machine. Using a 1/3 cup measure, pour batter into the pan to make a large circle and cook until bubbles form on top – about 2-3 minutes. Flip and cook for a minute or two more. Repeat with the remaining batter.
  5. For the sauce: Combine all ingredients in a bowl and stir until smooth.
  6. Serve warm with sliced banana and caramel sauce.
  • For thinner pancakes add a little more milk. The brown flour gives you extra fibre in your diet.
