Pasta and Salad Cups
Try this simple pasta lunch that you can customize to suit you. Leave out or add in… it’s as simple as that!
Pasta and Salad Cups

  • Makes: 4 – 6 

Ingredients

  • 150 g SPAR Pasta Fusilli (screws)
  • 8 – 10 SPAR Freshline Cherry Tomatoes
  • 2 SPAR Freshline Carrots, grated
  • 1 SPAR Freshline Celery Stick, chopped
  • SPAR Freshline Lettuce
  • SPAR Feta, cubed
  • 125 ml SPAR Cheddar Cheese, Grated
  • 2 – 3 SPAR Eggs, boiled
  • A few SPAR Olives, pips removed
  • SPAR Cheese Grillers
  • SPAR Reduced Fat Salad Dressing

Method

  1. In a large saucepan of boiling salted water, cook the macaroni until tender. Drain and rinse under cold water. Allow to cool.
  2. In each plastic cup, layer all the ingredients that you are using in any order. 
  3. Pack your dressing separately in a small container or dollop on top. Cover with a lid.
  4. Don’t forget to pack a fork or spoon.
If you pack a frozen drink or water with your lunch it will keep it cool and by lunchtime you will still have a cold refreshing drink.
