Watermelon Popsicle

Watermelon Popsicle
Fun, refreshing and a great way to enjoy fruit!
Watermelon Popsicle
  • Makes: 6 – 8 depending on size of the moulds

Ingredients

  • 900 ml SPAR Freshline Cubed Seedless Watermelon 
  • 75 ml SPAR Sugar, divided 
  • 15 ml Fresh Lemon Juice 
  • 15 ml SPAR Raisins
  • 125 ml SPAR Plain Yoghurt 
  • 6 SPAR Freshline Kiwi Fruit, peeled and chopped
  • Drop of Green Food Colouring (optional)

Method

  1. Place the cubed watermelon, 30 ml sugar and lemon juice in a blender. Puree until smooth and pour carefully into popsicle moulds, filling each 2/3rds full.
  2. Sprinkle a few raisins on top and use a skewer to push into the watermelon mixture to look like seeds. Insert the popsicle stick and freeze for 3 hours or until set.
  3. Mix the yoghurt with 15 ml sugar.  Pour a thin layer of yoghurt over the watermelon. Return to freezer.
  4. Lastly puree the kiwi fruit with the remaining sugar and food colouring if using.  Pour over the set yoghurt and return to the freezer until frozen solid.
  • You can use SPAR Coconut Milk instead of yoghurt for the white layer if preferred.
  • Run the popsicles under water to help loosen them from the moulds.
