Thick Leek, Cauliflower and Kale Soup with Crispy Bacon
Try this delicious satisfying soup, served with crispy bacon and kale crisps.
Thick Leek, Cauliflower and Kale Soup with Crispy Bacon
  • Prep Time: 25 minutes  Cooking Time: 30 minutes
  • Serves: 6

Ingredients

  • 30g SPAR Butter
  • 2 SPAR Freshline Leek, chopped
  • 1 SPAR Freshline Cauliflower, separated into florets
  • 200g SPAR Freshline Kale/Spinach or Cabbage, shredded
  • 1l water
  • 1 SPAR Stock Cube (vegetable or chicken)
  • 1 bay leaf
  • 1tsp dried thyme
  • SPAR Salt and SPAR Ground Black Pepper to taste
  • 4 slices SPAR Butchers Choice Streaky Bacon, grilled so it’s crispy (or croutons for a meat-free soup)

Method

  1. Melt the butter in a large pan. Add the leeks and cook uncovered for a few minutes.
  2. Add the cauliflower, kale/spinach or cabbage, water and stock cube. Season with thyme and the bay leaf and bring to the boil. Simmer for about 30 minutes or until both the cauliflower and cabbage are tender.
  3. Remove and discard the bay leaf.
  4. Puree the soup in the pot using a hand blender, or transfer to a liquidiser and puree in batches, then return to the pot. Season with salt and pepper to taste.
  5. Garnish with crispy bacon (or croutons) and kale crisps.
  • For the Kale Crisps toss a few leaves lightly in olive oil. Season with salt and pepper and place on a baking tray lined with baking paper. Bake at 160ºC for 10-20 minutes until dried out.
