Grab-a-Granola

Spicy Granola with fennel seeds, cumin and Cayenne

Prep Time: 10 mins Baking Time: 30 mins
Makes: 4 cups

Ingredients

  • 1 cup rolled oats
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup sesame seeds
  • 1 cup flaked almonds
  • 2 tbsp brown sugar
  • ½ tsp salt
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • ½ tsp cayenne pepper
  • 1 tsp garlic powder/salt
  • 2 tsp sumac (optional)
  • 1 egg white, beaten
  • ¼ cup olive oil

Method

  1. Preheat oven to 160 degrees.
  2. Line a large tray with baking paper. In a large bowl, toss all the ingredients
  3. with the egg white and olive oil. Transfer mixture to the lined baking tray and bake
  4. for 25–30 minutes. Stir every 15 minutes to ensure even baking.
  5. Once done, allow to cool completely before eating or storing. Enjoy on salads,
  6. in curries, or sprinkled over soup. Also makes for a delicious savoury snack.

Curry Coconut Savory Granola

Prep Time: 10 mins Baking Time: 30 mins
Makes: 4 cups

Ingredients

  • 3 cups rolled oats
  • 1 cup cashews, roughly chopped
  • ½ cup coconut flakes
  • ¼ cup sesame seeds
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp garlic powder/salt
  • 1 large egg white
  • 1 ½ teaspoons Worcestershire sauce
  • 1/3 cup melted coconut oil or vegetable oil

Method

  1. Preheat oven to 160 degrees. Line a large baking tray with baking paper.
  2. Place the oats, cashews, coconut flakes, sesame seeds, curry powder, cumin, salt, and garlic powder in a large bowl and stir.
  3. In a small bowl, whisk the egg white and Worcestershire sauce. Drizzle over the oats mixture and stir to evenly coat.
  4. Pour the coconut oil over the mixture, working quickly to evenly coat the oats mixture before the coconut oil begins to stiffen. Spread in an even layer onto the lined tray.
  5. Bake for 25-30 minutes, stirring every 10 minutes for the first 20 minutes, then every 5 minutes until the granola is lightly browned and slightly crisp. (It will become more crisp as it cools.)
  6. Let it cool completely on the tray before storing in an airtight container.
  7. Keeps for up to 2 weeks or in the freezer for several months. This granola is great served over butternut soup, curries or salads.

Olive Oil Granola with Pistachios, Quinoa & Apricots

Prep Time: 10 mins Baking Time: 45 mins
Makes: 6 cups 

Ingredients

  • 2 cups rolled oats
  • ½ cup quinoa
  • 1 ½ cups hulled pistachios
  • 1 cup pumpkin seeds
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • ½ cup brown sugar
  • ½ cup syrup (preferably maple)
  • ½ cup extra virgin olive oil
  • 1 cup chopped

Method

  1. Preheat oven to 160 degrees. Line 2 small or 1 large baking tray with baking paper.
  2. In a large bowl, combine all the ingredients, except for the apricots. Mix until all the ingredients are evenly coated.
  3. Spread mixture onto the lined baking tray/s in an even layer and bake for 45 minutes, stirring every 10 minutes, until golden brown and well toasted.
  4. Transfer granola to a large bowl and add apricots, tossing to combine.

Chocolate, Pecan Nut & Sea Salt Granola

Prep Time: 15 mins Baking Time: 40 mins
Makes: 4 cups

Ingredients

  • 2 cups rolled oats
  • 1 cup pecans, roughly chopped
  • 1 ½ tsp sea salt
  • 2 tbsp cocoa powder
  • 1/3 cup vanilla almond milk (or regular milk)
  • ¼cup dark chocolate chips, plus extra for serving
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 160 degrees. Line 1 large baking tray with baking paper.
  2. Place the oats, pecan nuts and sea salt in a large bowl and toss.
  3. Heat the milk in a pot over medium heat. Just before it comes to the boil, remove from the heat and pour over chocolate chips. Whisk until combined and a chocolate sauce has formed. Whisk in cocoa powder, maple syrup and vanilla.
  4. Pour chocolate sauce over oats. Stir until completely combined. Place granola onto the lined baking tray.
  5. Place in the oven for 40 minutes, making sure to stir every 10-15 minutes.
  6. Once the granola is done baking, let it cool for at least 15 minutes before eating or storing in an air-tight container.
  7. Serve with yoghurt and berries, or enjoy as a snack. 
  8. Note: the cooling time allows the granola to become crunchy.

Spiced Apple Granola

Prep Time: 10 mins Baking Time: 55 mins
Serves: 5 cups

Ingredients

  • ½ cup flaked almonds
  • 1 cup pecans
  • 1 cup coconut flakes
  • 1 cup rolled oats
  • ½ cup raisins
  • 1 cup chopped dried apples
  • 2 tsp ground cinnamon
  • ½ tsp ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 1tsp vanilla extract
  • ½ cup apple sauce
  • 1/3 cup honey
  • 1/3 melted coconut oil or vegetable oil

Method

  1. Preheat your oven to 160 degrees. Line 2 small or 1 large baking tray with baking paper.
  2. In a large bowl, combine all the dry ingredients. In another bowl, whisk together the vanilla, apple sauce, honey and oil. Pour over the dry ingredients, make sure everything is moistened.
  3. Spread onto baking tray/s and bake for 45 minutes, stirring the granola every 10-15 minutes to prevent burning.
  4. Allow granola to cool for 20 minutes on the baking sheets. This will help it get crunchier.
  5. Cover tightly and store at room temperature for up to 2 weeks.
