Spicy Croissant Bread and Butter Pudding
Looking for a novel but easy pudding to impress friends and family? Try this creamy, spicy twist on the classic bread and butter pudding. They’ll be begging for seconds!
Spicy Croissant Bread and Butter Pudding

Ingredients

  • 4 croissants
  • 375ml (1 ½ cups) SPAR Long Life Fresh Cream
  • 2 star anise
  • 2 cinnamon sticks
  • 4 SPAR Free Range Eggs Large
  • 80g SPAR White Sugar
  • 375ml (1½ cups) SPAR Vanilla Flavoured Custard
  • 2,5ml ½ tsp) salt
  • 60ml (¼ cup) SPAR Salted Butter, melted
  • 5ml (1 tsp) vanilla essence

Method

  1. Preheat the oven to 160˚C. Slice the croissants in half and cut each half into three slices. Divide among six 250ml ovenproof ramekins.
  2. Heat the cream and spices in a small saucepan over low heat to infuse, 6 minutes. Discard the spices.
  3. Whisk the eggs and sugar together in a medium bowl. Add the custard, salt, butter, cream and vanilla essence, and mix until combined. Pour the custard mixture over the croissants and allow to soak, 5 minutes.
  4. Bake for 1 hour until set. Serve warm.
  • Lightly dust the croissant puddings with icing sugar just before serving.
