Scones for a Crowd
More tea, vicar? There's no better excuse for a tea break than freshly baked and hot buttered scones!
Scones for a Crowd
  • Prep Time: 45 minutes Cook Time: 1 hour

  • Makes 63 Scones

Ingredients

  • 2 x 1 kg SPAR cake flour
  • 150 ml baking powder
  • 10 ml salt
  • 500 ml SPAR canola or  sunflower oil
  • 8 large eggs
  • 1.25 litres maas

Method

  1. Preheat oven to 220 º C. Lightly spray 3 SPAR Good Living baking pans with cooking spray.
  2. Sift the flour, baking powder and salt into a large SPAR Good Living 3 litre porcelain mixing bowl.
  3. In a separate SPAR Good Living 3 litre porcelain mixing bowl, combine the oil, eggs and maas. Pour into the dry ingredients and gently mix in a cutting action, until a soft textured dough forms.
  4. Working with quarter of the dough at a time, gently work and shape it on a floured work surface, to 2-3cm thick. *The thicker the better. Never use a rolling pin.
  5. Using the medium size SPAR Good Living cookie cutter, cut out rounds and transfer directly onto the prepared baking pans.
  6. Bake for 15 minutes, while you cut out and prepare the next batch of scones for baking.
The most common faults in scones are:
  • Kneading the dough too much,
  • Using too much flour during the cutting stage, and working with a dry mixture; a spongy, soft but workable dough is best.
  • Being too economical and cutting them out too thinly. Use the small scone cutter for cocktail snack size, medium for tea scones, and the large for savoury scones e.g. cheese.
