Rosemary Roast Pork Belly with Apple, Ginger Sauce
A true winter warmer that will have you licking your fingers and asking for more.
Rosemary Roast Pork Belly with Apple, Ginger Sauce

Ingredients

For the pork belly:
  • 1 pork belly
  • 2 sprigs rosemary
  • Coarse salt and pepper
  • 100ml vegetable stock
For the apple, ginger sauce:
  • 1 tin unsweetened, cooked apples
  • ½ tsp fresh ginger, chopped
  • Salt and pepper to taste
  • 2ml honey
For the flash fried green beans:
  • 500g fine green beans
  • 15ml olive oil
  • ½ teaspoon garlic

Method

  1. Preheat your oven to 160°C. Mix the salt and pepper with the rosemary. Rub the pork belly with the salt, pepper and rosemary mixture and place in a roasting tray. Pour the vegetable stock around the pork. Place in the middle tray of the oven and roast for approximately 2.5 to 3 hours, basting regularly.
  2. While the pork is cooking, prepare the apple and ginger sauce. Place all the ingredients in a blender till smooth. You can heat the sauce before serving with the pork if you prefer.
  3. With 10 minutes to go on the pork, heat the olive oil and butter in a pan till almost smoking. Add the garlic and beans and fry till just tender. Place on the side of a roasting platter next to the pork belly and apple sauce.
