Prawn Cocktail

Prawn Cocktail
Create the classic starter with juicy Mozambican prawn tails and a creamy butter wine sauce.
Prawn Cocktail

  • Serves: 6

Ingredients

  • 3 SPAR egg yolks
  • 15ml (1 tbsp) SPAR lemon juice
  • 125ml (½ cup) Olive Brook Mirabilis MCC
  • 30g SPAR butter, cubed
  • 1 head Freshline butter lettuce, thinly sliced
  • 250g-300g SPAR Mozambique Pink Prawn Tails, steamed
  • 1 Freshline avocado, cubed
  • 1 x 400g tin SPAR whole pitted lychees, drained
  • salt and freshly ground black
  • pepper, to taste
  • lime slices, to serve

Method

Mirabilis Sauce

  • Combine the egg yolks and lemon juice in a heatproof bowl over a saucepan of boiling water. Whisk until pale and fluffy.
  • Add the Mirabilis and whisk for another 4 – 5 minutes.
  • Add the butter, a cube at a time,and stir until incorporated. Keep a spoonful aside for garnishing.
  • Fill 6 glasses halfway with the lettuce.
  • Combine the prawns, avocado, lychees, Mirabilis sauce, and season.
  • Add prawn mixture to the glasses.
  • Scoop a spoonful of sauce over the mixture and garnish with lime and micro leaves.
