Layered Grilled Vegetable & Couscous Salad

A colourful and healthy salad that's a meal in itself.
Ingredients
(6-8)
500 g SPAR Freshline Ready to Roast Vegetable Mix
250 g SPAR Freshline Cherry Tomatoes, halved
12 SPAR Whole Calamata Olives, pitted and halved
250 g couscous
500 ml stock made with SPAR Chicken Stock Cubes
1 round SPAR Feta Cheese
1 Bag Assorted SPAR Freshline Salad Leaves
For the dressing:
60 ml SPAR Extra Virgin Olive Oil
5 ml paprika
15 ml ground cumin
15 ml SPAR Tomato Paste
Juice of 1 lime or ½ lemon
10 ml SPAR Brown Sugar
Salt and freshly ground black pepper to taste
Method
Prepare the vegetables as per instructions. Cool completely.
Toss the vegetables with cherry tomatoes and olives.
Place the couscous in a large, heat proof bowl, then pour over the stock. Stir with a fork, and set aside for 5 minutes until it has absorbed the stock and softened.
Crumble the feta and mix into the couscous.
For the dressing, whisk all the ingredients together. Season with salt and pepper to taste.
To serve, place the couscous in a large, wide salad bowl. Top with the grilled vegetables and arrange the salad leaves on top.
Drizzle the dressing over the salad.
