Braised Brussels Sprouts with Bacon & Crispy Cranberries

Brussels sprouts braised with bacon and cranberries with a hint of garlic and fresh thyme.
Ingredients
(4-6)
30 ml SPAR Extra Virgin Olive Oil
200 g SPAR Diced Bacon
1 SPAR Freshline red onion, peeled and sliced
2 small SPAR Freshline garlic cloves, minced
500 g SPAR Freshline Brussels Sprouts, cooked
250 ml SPAR Chicken Stock
125 ml SPAR Dried Cranberries
10 ml freshly chopped SPAR Freshline thyme (optional)
Freshly ground black pepper to taste
30 ml SPAR Honey
Method
Heat olive oil in a frying pan over a medium heat. Add bacon and sauté until crisp. Remove bacon and set aside.
In the same pan, sauté onion and garlic until soft. Add brussel sprouts then stock. Cover and braise for 10 - 15 minutes or until brussel sprouts are heated through.
Remove lid. Add cranberries, thyme, seasoning and honey. Simmer uncovered, tossing until the stock has reduced and the cranberries have soaked up the stock.
Return bacon to the pan. Toss and serve immediately.
