Roast Vegetables with Chilli Oil Recipe

Make the side dish the star of the show with some honey, lemon, chilli and a selection of fresh herbs.

Recipe Ingredients

  • 1 SPAR Freshline Potjie pack
  • 1 SPAR Freshline Sweet potato pack
  • 1 SPAR Freshline punnet Roma tomatoes, washed
  • 2 TBSP SPAR olive oil
  • 1 TBSP SPAR lemon juice
  • 1 tsp SPAR honey
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 SPAR Freshline chilli, chopped
  • SPAR Freshline -  herbs: parsley, coriander, thyme, rosemary

Recipe Method

  1. Preheat the oven to 200° c.
  2. Line a baking tray with baking paper.
  3. In a large bowl, toss potjie pack, sweet potatoes and tomatoes with 2 tablespoons of olive oil and salt & pepper to taste.
  4. Transfer the vegetables to the baking tray and roast in the oven until tender and caramelised +- 30 minutes.
  5. Place the roasted vegetables onto a serving platter.
  6. In a bowl mix together oil, lemon juice, honey, salt & pepper, chilli.
  7. Pour over vegetables and serve with fresh herb garnish.
