Marinated Chicken with Mandarin Salad Recipe

Succulent chicken in a creamy maas marinade with a colourful citrus salad.

Recipe Ingredients

  • Your Butcher Star Pack 4 Drum, 4 Thigh Chicken Pieces
  • ½ cup (125ml) SPAR Buttermilk / Amasi
  • Zest and juice of 1 SPAR Freshline Beauties Mandarin
  • Juice of 1 SPAR Freshline Lemon
  • Pinch of chilli flakes
  • Sprig of SPAR Freshline Rosemary
  • 2 cloves SPAR Freshline Garlic, crushed
  • 1 Tbsp (15ml) SPAR Honey

Salad

  • 1 packet (220g) SPAR Freshline Italian Salad Lettuce
  • 1 SPAR Freshline Mediterranean Cucumber, sliced
  • 2 SPAR Freshline Beauties Mandarins, peeled and sliced
  • 100g SPAR Freshline Julienne Carrots
  • 100g SPAR Freshline Mange Tout 
  • 150g SPAR Freshline Radishes, quartered
  • 2 rounds (130g) SPAR South African Feta plain, cubed

Dressing

  • ½ cup (125ml) SPAR Buttermilk / Amasi
  • 1/3 cup (80ml) SPAR Mayonnaise
  • Juice of 2 SPAR Freshline Beauties Mandarins
  • Juice of 1 SPAR Freshline Lemon
  • 2 Tbsp (30ml) SPAR Honey
  • 1 tsp (5ml) SPAR Mustard
  • 1 clove SPAR Freshline Garlic, crushed
  • Big pinch of SPAR Salt
  • Small handful of fresh dill, chopped

Recipe Method

  1. Season the chicken pieces and place in a bowl or Ziploc bag.
  2. Mix all the marinade ingredients together and pour over the chicken. Marinade for at least 4 hours or overnight in the fridge.
  3. Preheat the oven to 200º C
  4. Remove the chicken from the marinade and braai or bake in an oven for 25 to 30 minutes.
  5. Place the lettuce, cucumber, mandarin, mange tout, radishes, and carrots in a bowl and top with feta.
  6. Drizzle over the citrus dressing and serve with the chicken pieces.

Hints & Tips

Marinating chicken in buttermilk, maas and yoghurt helps to break down the proteins and tenderise the meat.
For a fuss free method, place your marinade and chicken into a Ziploc bag and remove as much air as you can.
