Savoury Roasted Butternut Dip Recipe

Recipe Ingredients

  • 400g SPAR Freshline butternut, roasted
  • 1/3 cup SPAR olive oil, plus 1 tablespoon for drizzling
  • Juice and zest of 1 SPAR Freshline lemon
  • 1/4 teaspoon ground cinnamon
  • 2 SPAR Freshline garlic cloves, peeled
  • 1/4 cup tahini (sesame seed paste)
  • 1/2 teaspoon salt, plus extra to taste
  • 1 can (400g) SPAR chickpeas, drained and rinsed
  • Freshly ground black pepper, to taste
  • 1 tablespoon SPAR Freshline thyme leaves, roughly torn

Recipe Method

  1. In a food processor, combine 1/3 cup of olive oil, lemon juice, lemon zest, cinnamon, garlic, tahini, and salt. Blend until smooth.
  2. With the processor running, gradually add the chickpeas, blending until fully combined and smooth.
  3. Taste and adjust seasoning with additional salt and freshly ground black pepper if needed.
  4. Add the roasted butternut to the mixture and blend until completely smooth.
  5. Transfer the dip to a small serving bowl. Use the back of a spoon to create a slight well in the centre.
  6. Drizzle the remaining 1 tablespoon of olive oil over the dip and garnish with thyme leaves.
  7. Finish with a sprinkle of extra salt and pepper to taste.
  8. Serve and enjoy with your favourite chips or crackers!

Hints & Tips

For added texture and a pop of sweetness, try roasting a few extra butternut cubes with a sprinkle of cinnamon and olive oil. Chop them and fold into the dip just before serving.
