Savoury Roasted Butternut Dip Recipe
Ideal for dipping chips or crackers, this flavourful spread will be a hit at your next gathering!
Recipe Ingredients
- 400g SPAR Freshline butternut, roasted
- 1/3 cup SPAR olive oil, plus 1 tablespoon for drizzling
- Juice and zest of 1 SPAR Freshline lemon
- 1/4 teaspoon ground cinnamon
- 2 SPAR Freshline garlic cloves, peeled
- 1/4 cup tahini (sesame seed paste)
- 1/2 teaspoon salt, plus extra to taste
- 1 can (400g) SPAR chickpeas, drained and rinsed
- Freshly ground black pepper, to taste
- 1 tablespoon SPAR Freshline thyme leaves, roughly torn
Recipe Method
- In a food processor, combine 1/3 cup of olive oil, lemon juice, lemon zest, cinnamon, garlic, tahini, and salt. Blend until smooth.
- With the processor running, gradually add the chickpeas, blending until fully combined and smooth.
- Taste and adjust seasoning with additional salt and freshly ground black pepper if needed.
- Add the roasted butternut to the mixture and blend until completely smooth.
- Transfer the dip to a small serving bowl. Use the back of a spoon to create a slight well in the centre.
- Drizzle the remaining 1 tablespoon of olive oil over the dip and garnish with thyme leaves.
- Finish with a sprinkle of extra salt and pepper to taste.
- Serve and enjoy with your favourite chips or crackers!
Hints & Tips
For added texture and a pop of sweetness, try roasting a few extra butternut cubes with a sprinkle of cinnamon and olive oil. Chop them and fold into the dip just before serving.
