Quick Blueberry Muffins Recipe

- ½ cup SPAR castor sugar
- ½ cup SPAR milk

Recipe Method
- Preheat Oven: Preheat your oven to 200°C. Line a 12-cup muffin tin with muffin liners or grease the cups with non-stick spray.
- Mix Dry Ingredients: In a large bowl, mix the self-raising flour and castor sugar.
- Mix Wet Ingredients: In another bowl, whisk together the milk, oil, egg, and vanilla essence.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Add Blueberries: Gently fold in the blueberries.
- Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
- Bake: Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
- Cool: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
